Question, has anyone here set their boat up with a wireless network and moved away from traditional sounder type head units to a more table/laptop based system?

We run the Simrad GO series. You still have a wire for transducer, but the head unit has Wi-Fi built in and can broadcast to android devices through an app. We had a 24" tv set up with a android box running app and display. If you use your smart phone or tablet you can actually control the display from the touch screen. It looked really impressive and didn't break the bank. The unit will also update charts ect. when you have Wi-Fi internet. Not sure if this helps..

On my 2016 270, I ran everything from an iPad. Used VesselView mobile for the engine data, used Navionics for the charts/GPS, used Dark Sky for weather. I use Google Fi and had a data sim card I used for cellular access on the iPad. I ran all my music from the iPad. Note iPad's with the cellular chip have a GPS chip in them too. The WiFi only iPads do not.
